Strawberry Bottom Cheesecake Pie

It's a fairly easy recipe and the end result is scrumptious.

Here's the ingredients you'll need:
1 Graham Cracker ReadyCrust
4oz Cream Cheese, softened*
1/4 cup Sugar
1/2 cup Sour Cream
1 teaspoon Vanilla
4oz Whipped Topping, thawed (Note: I would use cool whip for this. NOT the stuff that comes in a can)
1 pint Fresh Strawberries, thinly sliced
1 cup Strawberry Glaze (Note: Though the recipe does call for this, I'd say it's purely optional. It tastes perfectly fine without it and sometimes the proper glaze can be hard to find)

*To soften cream cheese place place in the microwave (in a dish of course) for 15-20 seconds, on high. (Note: Depending on your microwave you may need to keep it in a few more or less seconds)

First you're gonna start by beating the cream cheese until smooth (Note: if you're new to baking, beat usually implies an electric mixer. I would put it on a low to medium setting, similar to the pace you would set were you using a spoon. Although, doing it this way your arm doesn't get quite so tired so fast)

Gradually beat in sugar.

Add sour cream and vanilla.

Fold in whipped topping (IMPORTANT NOTE: PLEASE do not beat the whipped topping. Folding implies gentle ministrations with a utensil [Large spoon or fork]. It will lose it's fluffiness if you beat it. Be gentle as the whipped topping is your friend.)

If you are using the glaze spread a thin layer over the bottom of the crust.

Place your strawberry slices on the bottom of the crust (Note: If you're anything like me, save a few pieces to place on top as part of a decoration. I'll note more of this at the bottom).

Again, if you are using glaze, at this time place the remaining glaze over the strawberries.

Gently spoon your cream cheese mixture over the berries.

Cover and chill until set. This usually takes at least 4 hours.

FOR DECORATION: I usually set aside a few slices of strawberry and some spearmint leaves as garnish (because you all know about my affinity for spearmint). Depending on how you've sliced your strawberries you can either place them in a decorative circle or place them like hearts in the middle. I usually do the circle for an every occasion kind of thing and hearts for valentines day or anniversaries. Place a sprig of spearmint in the middle and voila! you now have a Strawberry Bottom Cheesecake Pie. Enjoy!

I'm House Trained, Honest

Alright.

I'm bored so you get to be subjected to my neurotic thought process.


First of all, I'm totally stressing. I have no idea how I'm going to work and attend four classes and a lab. I barely made it through the last two semesters. I just don't think I'm really prepared for this.

Second of all, on top of all that. I have to make up my mind by DECEMBER if I'm moving out of state next year. WTH. I've known for a while I was gonna move away but this is not helping my stress level. I seriously wouldn't even realistically have the money necessary for that unless I took out so many loans it's not even funny.

So I guess it's pretty much decided that unless a very wealthy relative kicks the bucket very very soon and leaves me everything (which is not happening, all my relatives are healthy as fucking horses) then I'm not moving out of state next year. *sigh* I really really want to move too.

One thing that I know for sure is that I'm changing colleges next year. My original plan was to go to University of Maine in Orono but that may have changed. The only real upside to Orono is that I would still be able to live at home.

On the other hand, I may be going to Brunswick to attend Bowdoin. That is actually my preference right now. I'm still close enough my parents can help out financially but I'll be far enough that I would need to stay in the dorms. Although, I have no idea what I'm going to do about my cat. I don't think I can go that long without her. Then again, she can't live somewhere that she can't go outside. It's all so messed up.

ALSO, it's a much better college than UMO. I have more chances of getting a decent job with a degree from Bowdoin, than I do from UMO.

Aside from all that crazy school related stuff, the plans for next summer are looking really good. I'm set to attend ComicCon in July (though the date I'm going to be flying out is a little fuzzy. Still not sure if I'll be staying to see family).

And I'm rooting for May, but my mom would prefer August, for my CROSS-COUNTRY ROAD TRIP. That is right, I have been approved to drive...across the country...by myself. It's going to be so amazing. Albeit, my car will probably overheat, I'll probably flatten at least two tires, and I think the AC is going but I don't care. I really wanna do this.

It'll definitely help in the whole 'deciding where I want to live when I move out of state' issue. I'll get to see a lot of places I only dreamed about going to, seeing as how the farthest west I've ever been has been Pennsylvania. Yeah, I've never even seen the Pacific Ocean.

Can it be next summer yet?

Mononucle-o-killmenow

I'm tired. Really, really tired. Tired enough that I can barely stay awake for more than four hours at a time. I have a sore throat, my head is killing me, and my limbs are incredibly weak (like so weak I have a hard time standing up).

I went to sleep at three o'clock this morning and didn't wake up until after five and that was only because my mom came in and poured water on me. I apparently wasn't waking up all that easily. I've been sleeping like the dead lately and my mom thought maybe I had stopped breathing at some point.

I have school in a week. There's no way I'll be able to get in and see my doctor before it starts. This sucks. I seriously hope this passes before the 31st.

I'm tired again. I'm gonna try and not pass out in the shower and then maybe I'll climb back upstairs into bed.

Picture Love

Alrighty, for those of you I know personally (and you're probably the only ones reading this) and if you follow my twitter (which you're probably not approved to follow me unless I know you) then you may know that for the past two days I've been cleaning the cave I refer to as a room.

As a result of this I've removed a lot of my old photographs of people I no longer have relationships with.

And you may be asking yourself, "Self, why the fuck am I reading about this bearcat's lack of social life?"
(Bearcat: 1920's slang for female, hellion, spitfire, etc...)

And my answer to your smart, lovely, little self would be this: I like pictures. I like having pictures of friends/family. I like having pictures of friends/family in my room.

Now, the pictures of family I've got covered. I can easily come across any of those.

However, since I have made new friendships (all of which are NOT in the state of Maine) I have no pictures.

Your mission is this, should you choose to accept it: Send me pictures. Headshots, embarrassing school photos, a drawing of your dog you did when you were six, I don't really care. I just need something to put in all those empty frames littering my room.


You will have eternal love from yeti's if you send me pretty pictures.

I'm A Little Tea Pot...

Squee! First post of the new blog. Fun, fun my friends. Fun, fun.

Where do I begin?

I guess we'll start with a general description for this madness...

I'll be updating the progress of my stories through this site. I'll also clue you in on the mundane day-to-day goings on in AJ-Land. Sounds fun doesn't it?
I'll post little ramblings every now and then to let you know how badly I'm failing my classes, exactly why I hate my job, let you in on my random thought process, and because I'm such a music h00r, you'll get to find out what I'm listening to and maybe even what I'm reading (if it doesn't happen to be a textbook).

So, keep checking back, you don't want to miss a second of the excitement.

P.S. I'm exaggerating/being sarcastic. Please don't take much of what I say as being entirely serious (unless I tell you otherwise of course).
